Industrial fermentation is deliberate, ex-situ culturing of microorganisms which yields, by further processing, products useful to humans. The end product of fermentation (after purification and/or downstream processing) finds applications in food as well as in many other industries. Commodity chemicals, such as acetic acid, citric acid, and ethanol are manufactured in bulk by this process. In this report, production of extracellular metabolites (chemical compounds) and transformation of products (transformed products of substrate) is considered. The global market for fermentation products was valued around $30 billion in 2014 and is expected to grow at 5.4% in the period 2015-2019.

Fermentation products find it application in pharmaceutical industry, alcohol industry, food and beverages industry among many others. The low cost, better outputs, and natural structure allows the fermentation products to be invariably used at large in several industries across the globe.

Strive for the eco-friendly production system and advantage of easy and convenient production of bioactive biomolecules which has numerous industrial applications, and rising environmental concerns are some of the major factors is driving the fermentation market. The growth in this market will be brought about by robust demand in different product segments and applications. Some other types of segments which include vitamins, xanthan, and antibiotics are also very attractive in the global fermentation products market. Moreover, an increase in demand for alcohol is one of the major drivers of the market. Fermentation chemicals, especially alcohols, are extensively used for various applications in the F&B industry in the form of spirits, liquors, and cooking wines. Fermented alcohols have become an integral part of various production processes in the chemical industry, leading to their increased demand.

The microorganisms which are used are bacteria, yeasts and molds. For these microorganisms and for fermentation the environment changes with the change in the substrate and kind of molecule to be manufactured. Some of these, physical factors dissolved oxygen level, nutrient levels, and temperature. The substrate used for the fermentation process is derivatives of agricultural commodities and is vastly affected by its seasonality.  Some of them are starch and carbohydrate-rich agricultural products of corn, sugarcane, tapioca, sugar beet, and wheat Thus it is one of the major challenges that the industry is facing. High operating costs, high initial investments, research & development, process optimization bottlenecks and the limited availability of raw materials are making it difficult for the manufacturers of fermentation products to gain profits.

The report covers detailed outlook on the fermentation products market by segmenting the overall market based on its product segment analysis and application segment analysis. The market based on product type is segmented as alcohols, Amino acids, organic acids, nutritionals & antibiotics and others. Alcohols accounted for the largest market share around 80%. The total revenue generated by the alcohol segment of fermentation chemicals market was around US$ 23 billion in 2014.

The market is also segmented based on application which includes breweries wineries and spirits, bakery & confectionary, dairy, Pharmaceutical, animal feed, and others. The breweries, wineries and spirit application segment held the largest market share in 2014 with approx. 56 % market share in 2014.

Based on regional analysis, the regional segmentation includes the current and forecast demand for different regions such as Asia Pacific, North America, Europe, and Rest of the world (RoW). Among the various geographies, North America represents the most significant and largest market for the fermentation products industry. In the recent past, growth in this market throughout this region was driven by surging growth in the pharmaceutical market in the U.S. Asia Pacific is the second largest market for fermentation chemicals, subsequently followed by Europe and RoW. Due to the trending market saturation witnessed in the European and North American markets, Asia Pacific region is expected to be the future potential market until the end of the forecast period.
