Polystyrene is a vinyl polymer, with a long hydrocarbon chain structure, wherein a phenyl group is attached to every other carbon atom. It is produced through the polymerization of styrene. Polystyrene is mainly used in the food service industry in the form of containers, rigid trays, and disposable utensils (such as foamed cups, plates, and bowls). However, polystyrene has certain disadvantages. It is brittle and flammable; it softens with boiling water; and it yellows upon prolonged exposure to sunlight.
